Best Fuckin,Bone Suckin Sauce

(AND NO CRACKS LIKE,"HEY GIRL, I'VE GOT A BONE YOU CAN SUCK."I'VE HEARD THAT ALREADY) I use a couple of racks of pork back ribs, about four pounds.Place the racks in a large baking dish. Pour a little water and a little apple cider vinegar in the dish and cover the dish tightly with tin foil.Cook at 400 degrees until tender, from 60 to 90 minutes. Remove from oven.Watch out for steam when you remove foil.

Heat barbecue to medium and place ribs meat side down(with no sauce).Baste the back with sauce. When the ribs develop grill marks, turn over and baste the tops.Give them a couple of minutes on both sides.Baste the meat side again and grill it for a minute or two more.

INGREDIENTS:
+1.5 cup of sweet bbq sauce(any brand)
+ 1/4 cup light brown sugar
+ 1/4 cup of pure maple syrup
+ 2 tablespoons of soy sauce
+ 1 tbl hot sauce (your favorite.I like extra hot)
+1tbl grated fresh ginger or prepared ginger paste from Asian food market.
+ a few shakes of garlic powder and fresh ground pepper and if you like ,a few flakes of chili peppers and salt to taste.

ALTERNATE - LEMON PUCKER,BONE SUCKER SAUCE
Makes about 3 cupsThis sweet sauce gets a little tang from the lemon juice. If you're cooking the ribs on a gas grill and want to compensate, 1 1/2 teaspoons of Liquid Smoke will help, but the sauce is fine without it.

+2 cups ketchup
+ 1/2 cup light or dark brown sugar
+ 1 teaspoon finely grated lemon zest
+ 6 tablespoons freshly squeezed lemon juice, or more to taste
+ 2 tablespoons molasses
+ 1 tablespoon Worcestershire sauce
+ 2 teaspoons dry mustard, such as Colman's
+1 teaspoon onion powder
+ 1/2 teaspoon freshly ground black pepper

Combine the ingredients in a medium saucepan over medium heat. Cook for 8 to 10 minutes, until a thick sauce forms. Taste, and add lemon juice as necessary. Transfer the sauce to a bowl or clean jar and let it cool to room temperature. Cover and refrigerate until ready to use.
