Sugar Free Applesauce Raisin Cake For CC

2 c. raisins
2 c. water
3/4 c. oil
4 tbsp. artificial sweetener (remember,one packet of Splenda or Equal = 1 teaspoon of sugar)
2 eggs
2 c. flour
1 tsp. soda
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1/2 c. nuts (if desired)(walnuts or pecans)
1 c. unsweetened applesauce

DIRECTIONS:
Sift all dry ingredients together and set aside. In a separate bowl mix all wet ingredients. Mix wet and dry ingredients together and mix well, then fold in applesauce, nuts and raisins. Pour in a greased and floured cake pan unless using a non-stick pan. Bake at 350 degrees for 25 –30 minutes or until cake springs back when lightly touched in the middle.
Diabetic Frosting
INGREDIENTS
1 pint Whipping Cream
1 box Sugar Free Pudding
16 ounces Cream Cheese
3TBSP Splenda

DIRECTIONS
Whip Whipping Cream in cold bowl until stiff (chill paddle too).
Add softened cream cheese, pudding mix
and Splenda.
Mix on medium speed until well blended.
Can be colored and piped

This icing will cover and decorate an 8-inch 2-layer round cake. Enjoy

    You know how I love sweets. Seen the recipe this morning and you guessed it, baked one.
    The weather is rough and I can't get out, there's nothing to do but cook/eat and when the kids are napping, get a litlle wall sex.
    If you don't stop giving me all this good food, my musty butt is going to be so big, my man will have to get a car-jack to push back the wrinkles.He may get lost for a while if he fall in.[giggles]
    Weather still bad here, the steeple on our church fell on a car and the driver was badly hurt, but he's doing fine now.
    It rained 3/5 inches in a couple of hours, we had tornadoes, twisters, the weatherman says more to come. The River and lakes are over flood level.Gil and Chris helped Leon put sand-bags at his place, he's safe for now, the house is on a high hill.
    It's just raining now, so I hope I get to see you tonight.....CC

  2. If Leon gets flooded(God forbid)you may be relieved you got out of there.If you had remained in that house you may have had one disaster after another.It wasn't your destiny to live there.I hope you haven't passed the jinx on to Leon.
