Take Your Pick Dad...Keep Nee in the Kitchen

BANANA LOAF: Sugar Free
Ingredients:
2-1/4 cup all-purpose flour
2/3 cup honey-crunch wheat germ
1/4 teaspoon baking Soda
1/2 cup rolled oats, uncooked
1/4 cup brown sugar, packed
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup egg substitute, thawed
1/3 cup walnuts, chopped
1 teaspoon vanilla extract
1-1/2 sticks margarine
1-1/2 cup mashed bananas
6 ounce can frozen apple juice concentrate, thawed

Directions:
Preheat oven to 350 degrees F.
Grease 9"x5" loaf pan.
In large bowl, mix first 7 ingredients.
With pastry blender, cut in magarine until mixture resembles coarse crumbs.
Stir in bananas, undiluted apple-juice concentrate, egg substitute, walnuts, and vanilla just until flour is moistened.
Spoon batter into pan.
Bake 60 minutes or until toothpick inserted into center of bread comes out clean.
Cool bread in pan on wire rack 10 minutes; remove from pan and cool slightly.
Serve warm, or cool completely to serve later.

PUMPKIN PIE: Sugar Free
Ingredients:
1 (9-inch) pastry shell
1 tsp ground cinnamon
1-1/2 cup pumpkin (canned)
1/2 tsp ground nutmeg
2 eggs; beaten
1/2 tsp ground ginger
1 cup low-fat milk
1/4 tsp Salt
3 tbsp liquid cal-free sweetener
1 pinch ground cloves
2 tbsp brown sugar, packed
Top with whipped cream

Directions:
Prick pastry shell with a fork. Bake in 450F oven for 8 min.
Stir together pumpkin, egg, milk, sweetener, sugar and seasonings. Pour into partially baked pie shell.
Bake in 350F oven for 50 minutes or until center is almost set. Cool slightly and then refrigerate. Cut into 8 wedges and serve each with whipped cream or 2 tbsp light vanilla ice cream.

CHOCOLATE CHIP COOKIES: Sugar Free
Ingredients:
1/4 c. margarine
1 tbsp. granulated fructose
1 egg
1 tsp. vanilla extract
3/4 c. flour
1/4 tsp. salt
1/2 c. mini semi-sweet chocolate chips

Directions:
Cream together margarine and fructose, beat in egg, water and vanilla. Combine flour, baking soda and salt in sifter. Sift dry ingredients into creamed mixture, stirring to blend thoroughly. Stir in chocolate chips. Drop by teaspoonsful onto lightly greased cookie sheet about 2 inches apart. Bake at 375 degrees for 8 to 10 minutes. Makes 30 cookies.

    I will be enjoying these goodies.
    Nee baked the banana loaf, I stole the first piece before the loaf cooled. before she went to work we had different sweets each day. As I hear from my boss(my son) that will be ending soon.
    So my dear Jeannie keep them coming.
    It's a shame I didn't have two sons, maybe I could barter or trade something to your husband for you, I would have two daughters that cook.Nan got me hooked on you guys blog magazine, enjoy the pictures and cartoons, especially the one with Nee rubbing my son's dick.
    By the way, who taught you now to make Biscotti??? I love them and Nee has tried to find a good recipe, I think she just finish baking a batch, but she won't leave the kitchen, sent gilly begging , he haul his fat butt out of there fast running to his daddy.
    As you can tell,when I get started,I am quite long winded.
    And again my sweet lady I thank you.

    I'm so pleased you enjoy the goodies, especially the Biscotti.There's nothing like it with a good cup of coffee or a cappuccino.
    Nee enjoys spoiling you.You got a jewel when you added her to your family and beautiful grandchildren too.That Gilly sounds like your partner in crime.

    Brian wouldn't trade me for anything,unless of course you offered him a very old Jag or a very new boat, then he would help me pack....HA!...
